Each month in 2024, the Farm to School Coalition of NC will be highlighting a fruit or vegetable of the month. This month, we are celebrating North Carolina’s official state vegetable: the sweetpotato! Sweetpotatoes are rich in beta-carotene and vitamin C, which help strengthen our immune system.
